Spaghetti in a creamy pink sauce.
The IPL season is here and what a better way to spice up the experience than by eating some delicious food? Make this simple, quick and easy spaghetti dish which everyone absolutely loves! Pre prepare the sauces a day in advance and store them in the freezer. You can also speed up the process by pre boiling the spaghetti and chopping the veggies before the game begins. If all this is done in advance this scrumptious dish can be made in minutes!
Ingredients –
250 gms spaghetti.
For the white Sauce –
- 1 tbsp olive oil.
- 200 ml full cream milk
- 3 tbsp flour (maida)
- 6-7 cloves of garlic (finely chopped)
- 150 gms grated processed cheese
- 1 tsp sugar
- 3-4 basil leaves
- 1 tsp each of pepper, oregano, dried thyme and chilli flakes
- Salt to taste
- Water as required.
For the red sauce –
- 1 tbsp olive oil.
- 1 red onion (finely chopped)
- 2 tomatoes (pureed)
- 1 tsp salsa sauce
- Bell peppers (1 finely chopped)
- 100 gms button mushrooms (finely chopped)
Method –
For the white sauce –
- In a bowl take the maida. Slowly add the milk while you stir the mixture with a hand whisk until there are no lumps remaining. Do note this needs to be done right before you start making the white sauce.
- In a pan add the olive oil and let it get a little warm. Now add the chopped garlic and sauté for 30 seconds.
3. Now add the milk and flour mixture, stirring continuously on a low flame, till no lumps remain.
4. Add most of the grated cheese, salt, pepper, sugar, herbs, chilli flakes and mix well till the sauce develops a nice, thick consistency. Add the leftover starchy water as required.
5. Remove the white sauce in a box and freeze it overnight.
For the red sauce –
6. In another pan heat olive oil, sauté the onions until golden brown. Add the mushrooms, bell peppers, tomato puree and salsa sauce letting it simmer till the mushrooms are cooked. Remove this into a container and freeze overnight.
7. Just before the match starts boil the spaghetti using a few drops of olive oil and water until it’s cooked Al Dante. Strain and leave some of the starchy water aside. Remove the sauces from the freezer until they defreeze.
#crazytip – To keep the pasta from sticking to each other add some olive oil on top when it’s strained and warm and just lightly toss the spaghetti strands with it.
8. In a pan heat olive oil. Add the white sauce and the red sauce and water as required. Mix well. Add the boiled spaghetti and fold gently.
9. Serve warm with some sprinkled cheese and enjoy the match.
